Elvis Presley Cupcakes

Elvis Presley Cupcakes



The one, the only - the King! This dark chocolate, peanut butter and banana delight is sure to clog your arteries! I fell in love with it at Cupcake Berlin and I'm sure you will too!

Ingredients:

Cake:

d 8 tablespoons butter
d 70g bittersweet chocolate
d 1/2 cup cocoa powder
d 3/4 cup flour
d 1 teaspoon baking soda
d 1 teaspoon baking powder
d 2 large eggs
d 3/4 cup sugar (Although I would try it with a bit less as the contrast between a bitter, not so sweet cake and very sweet icing is mind blowing!)
d 1 teaspoon vanilla
d 1/2 teaspoon salt
d 1/2 cup sour cream

Peanut butter icing:

d 1/3 cup cream peanut butter
d 2 cups confectioners sugar
d 1 teaspoon vanilla extract
d 3-4 tablespoons milk


How to:

Cake:

d Preheat oven to 160°C
d Combine butter, chocolate and cocoa in a heatproof bowl. Set over simmering water and wait until all ingredients have melted, stirring occasionally. Remove from heat and whisk thoroughly immediately. Leave to cool until just warm to the touch.
d Mix flour, baking soda, baking powder and in a small bowl.
d In a mixer, whisk eggs, sugar, vanilla and salt together until fully combined. Add cooled chocolate mixture and combine. Mix in the sour cream until well combined.
d Sift in the dry ingredients in three parts and mix until the dough is homogenous and thick.
d Divide the batter into cupcake liners, filling them 3/4 of the way. Bake for ca. 30 minutes. Leave to cool.


Peanut butter icing:

d In a large bowl, combine the peanut butter, confectioners sugar, vanilla and enough milk to achieve spreading consistency.
d Frost cupcakes and decorate with banana slices, banana chips, chocolate sprinkles etc.
